Used in baking, Zuga Erythritol exhibits different melting behavior, dough density, and moisture (Zuga is dryer). Zuga is 70-75% the sweetness of sugar. Some prefer to use it on a 1 for 1 basis as it reduces sweetness without losing mouth feel.
Using Zuga Erythritol as a bulking agent allows for lower calorie profiles in many dairy products and frozen desserts.
